Swaps That Save Dinner: A Beginner's Guide to Cooking Around Allergies

Somewhere along the way, a lot of us stopped cooking for a table and started cooking around one — around an allergy, a sensitivity, a picky eater, a diagnosis. If that sounds familiar, here's the good news nobody tells you: you don't need a new cuisine. You need a few good swaps.

A swap is just a stand-in that does the same job as the ingredient you're avoiding

Get three or four of them under your belt and whole categories of "we can't have that anymore" quietly come back on the menu.

The egg swap that starts everything

For baking, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit a few minutes until it gels. That's your "flax egg" — it binds muffins, pancakes, and meatballs the way a real egg would, and nobody at the table will know the difference.

The thickener swap

Out of cornstarch — or avoiding corn? Tapioca starch thickens sauces, gravies, and pie fillings at 2 tablespoons for every 1 tablespoon of cornstarch. Whisk it in at the end and keep it off a hard boil; tapioca gives up if it cooks too long.

The flour swap with the funny warning

When wheat and nuts are both out, sunflower seed flour stands in for wheat flour 1:1 in many bakes — it's the backup when almond flour can't come to the party. One honest heads-up: it can turn your muffins green as they cool. It's a harmless reaction with baking soda (use about a third less, or add a splash of lemon juice), but it's much funnier when you expect it.

The label habit that matters more than any swap

Sesame is the one that surprises people — it hides in hummus, tahini, spice blends, and "natural flavors." It has to be declared on U.S. labels now, so make the "Contains" statement your first stop, every time. Thirty seconds of label reading has saved more dinners than any recipe we know.

That's the whole philosophy

Small, doable changes, made with confidence, at a table where everybody gets to eat. If you're cooking around someone you love, you're exactly who we built our Wellness Lounge for.
