Swap Stories from Our Table to Yours: Three More Swaps Our Community Swears By

Yesterday we shared the swaps that save dinner. Today we want to talk about where those swaps actually come from — because around here, they rarely come from a cookbook. They come from each other.

Somebody's grandmother figured out the gravy

Somebody's neighbor cracked the baking problem at midnight before a birthday. Somebody read a label in the grocery aisle, put the jar back, and found something better on the next shelf. Our Eat Well & Be Well group runs on that kind of sharing, and this week — Swaps week — the stories have been flying. Here are three more swaps making the rounds, with the exact ratios so you can try them tonight.

The swap hiding in the can

The liquid from a can of chickpeas has a name — aquafaba — and it stands in for eggs in baking: 3 tablespoons equals 1 whole egg, and 2 tablespoons equals 1 egg white. It even whips, which is how a lot of egg-free bakers handle meringue-style toppings and light batters. Next time you drain a can, drain it over a bowl instead of the sink. You were about to throw away an ingredient.

The tiny seed that does the egg's job

Chia works the way flax does: mix 1 tablespoon of chia seeds with 3 tablespoons of water, let it sit a few minutes until it gels, and you have a binder for muffins, pancakes, and meatballs. Keep both chia and ground flax in the pantry and a missing egg — or an egg your table avoids — stops being a reason to cancel baking day.

The sauce swap that saves stir-fry night

Regular soy sauce is brewed with wheat, which catches a lot of households off guard. Coconut aminos is the standard stand-in our community reaches for — it pours and seasons like soy sauce, so stir-fries, marinades, and dipping sauces stay on the menu. Brands differ, so let the label be the judge, every time.

None of these asks you to learn a new cuisine

Each one just hands a familiar recipe back to a table that thought it was gone. That is the whole heart of our Lounge: small, doable changes, shared out loud, so nobody has to figure this out alone.
